Chef Rami Al Maket

From the kitchens of Damascus to a neighbourhood table in Dubai.

Arabic roots. Mediterranean flavours. A curiosity shaped by more than 25 years in kitchens.

Learning in the kitchen

Rami trained in hotel management in Syria and began his career in the kitchens of Damascus. His journey took him through Riyadh and Dubai, working across Arabic, Moroccan and international cuisines.

Along the way, he taught at the Hotel and Tourism Centre in Damascus, sharing his craft with other cooks. His approach brings together experience, a passion for cooking and a commitment to continuous learning.

Arabic roots, a wider repertoire

From December 2012 to February 2020, Rami worked at The Ritz-Carlton Dubai, first as Oriental Chef and later as Junior Executive Sous Chef. At Amaseena, his focus was Arabic cuisine, with evenings centred on kebabs and Moroccan cooking.

In 2017, he received Marriott’s ACE Rising Star Award for the Middle East and Africa. His wider career has taken in Mediterranean and international restaurants, Middle Eastern cooking and an Italian pizza kitchen.
